Frozen Desserts with Sous Vide

Making ice cream using a sous vide system allows you to set it and forget it. Given that ice cream is very temperature sensitive, being able to control the temperature and make sure that it doesn’t fluctuate like a traditional stovetop is a game changer. Simply set the desired time and temperature on the screen and you’re ready to drop in your ingredients and walk away. This also allows for a more gentle pasteurization process or even a gentle infusion, if you are solely infusing ingredients into your dairy.
